Ok, it’s Facebook Cookalong week round 2! A very famous but simple pasta dish on the menu this time, do not be put off by the vodka, this is one of the nicest pastas there is. I love the flavour in this dish, it’s rich, creamy and completely indulgent, forget about the hips and just go for it!
what you need:
350g penne
200ml double cream
2 slices cooked ham chopped
1 tbsp chopped flat leaf parsley
4 tbsp vodka and a few for yourself depending how bad your day has been:)
3 tbsp tomato puree
30g butter
salt and pepper
what to do:
bring a pot of water to the boil, add lots of salt and your pasta and cook until al dente…
chop your parsley and ham…
melt your butter….
add your tomato puree…
add your ham, parsley and season…
mix together and cook over a low heat for about 5 mins…
add your cream…
add your vodka, simmer over a low heat for about 5 mins until the alcohol has burned off and the sauce has thickened…
drain your pasta and add to the sauce…
mix together…
serve….
eat….
lick plates clean to avoid wash-up….

Do you know what the history behind this dish is? I mean, vodka’s not exactly native to Italy’s shores, is it?
Wondering whether it would work similarly with grappa…
do you think it would be at all the same substituting the cream for evaporated milk? it isn’t even that i’m worried about my hips, but cream makes me throw up every time i have it! this dish looks so good though!!
Mmm, another simple and stunning dish.
The flavour of this one reminds me of a contemporary Indian dish we have in New Zealand called Butter Chicken, which is huuuugely popular here (although I could never find an equivalent in Europe).
